The Cook II is responsible for hot food preparation in a scratch kitchen which includes preparing entrees, soups, and vegetables using provided recipes for our main dining room, lounge and retail location.One to two years of experience with demonstrated abilities working in all culinary station positions & pastry experience required.  Schedule will include some weekends, evenings, and holidays.  Must enjoy fast past in a brigade style kitchen.  

Additional responsibilities and expectations include:

- Working in stations for, Breakfast, Puree, Bistro, Salad Area
- Prepares from recipes provided with multiple processes
- Occasionally works other kitchen stations, including vegetable
- General supervision by Chef, Sous Chef or Chef de Cuisine
- Assists other cooks
- Assists in special function preparation and execution. 

The Cook II prepares food in accordance with current applicable federal, state, and local standards, guidelines, and regulations by accurately following our established policies and procedures.  Must carefully follow directions given by the Sous Chef, Sr. Sous Chef and/or Executive Chef to ensure that safe and high quality food service is provided at all times.

  • Comprehensive knowledge of food preparation and handling techniques
  • General knowledge of safety and sanitation rules and practices
  • Responsible for hot food preparation, including accompaniments and garnishes
  • Correctly prepares hot entrees, soups and vegetables following preparation sheets and provided recipes for main dining room, healthcare, resident café, employee dining room and any special functions
  • Prepares and creatively assembles cold appetizers, salads, cold entrees following preparation sheets and provided recipes for main dining room, healthcare, resident café, employee dining room and any special functions
  • Completes food temperature checks at each meal and records in log book
  • Completes preparation and productivity records as specified by production system and stores food items properly at the close of meal service
  • Cleans work area and equipment used in food preparation
  • Follows safety and sanitation rules and practices
  • Ensures that all hot food preparation and assembling is done in accordance with established procedures
  • Demonstrates knowledge of fire safety procedures and assists with evacuation of kitchen area to safe location in event of fire or other emergency
  • Able to work well independently given proper direction
  • Provides clean, safe, and neat environment for residents, self, and staff

Requirements

  • Prior cooking, baking, food service experience preferred
  • Willing and able to work a flexible schedule
  • Able to lift 25+ pounds
  • Fluent English-speaking, writing, spelling and math skills
  • Neat, clean, and professional appearance
  • Organized and detail oriented
  • Willing/able to work nights, weekends, holidays, and special events when required
